TUNA STUFFING BAKED POTATOES 
4-5 baking potatoes
1 lg. can tuna, drained
1 c. mayonnaise or low fat plain yogurt
1/2 c. chopped onions
1/2 c. chopped green pepper
Salt & pepper
1 c. shredded cheese or 1/2 c. cottage cheese

Wash potatoes, prick 3 or 4 times. Bake at 350 degrees for 1 hour. Cut potatoes in half lengthwise, scoop out potato into bowl, saving shell. Add tuna, mayonnaise, onion, cheese, green pepper, salt and pepper; mix well. Spoon back into shells. Mix 1/2 cup mayonnaise and 1 egg white; brush over tops. Rebake at 350 degrees for 15 minutes. Great to make ahead and just heat to serve.
