STUFFED BAKED POTATOES 
2 lg. baking potatoes
Vegetable oil
4 slices bacon
1/4 c. chopped green onions
1/2 c. sour cream
2 tbsp. grated Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
Paprika

Follow recipe for Twice-Baked Potatoes, except cook bacon in a large skillet until crisp; remove bacon, reserving 3 tablespoons drippings in the skillet. Crumble bacon, and set aside.

Saute onions in bacon drippings until tender. Combine bacon and onions with potato pulp and rest of the ingredients. Stuff potato skins with mixture and place on a baking sheet. Bake at 350 degrees for 15 to 20 minutes.
