PINEAPPLE NUT COOKIES 
1 c. white sugar
1 c. brown sugar
1 c. shortening
2 eggs
1 (8 oz.) can drained pineapple
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
Salt

Cream sugars and shortening, add eggs, vanilla, and pineapple. Sift flour, salt and soda and stir into creamed mixture. Add nuts, if desired. Drop by teaspoon or tablespoon on greased cookie sheet. Bake about 8 to 10 minutes in 350 degree oven. I usually double this recipe and frost the cooled cookies with powdered sugar icing made with the drained pineapple juice.
