STEAMED CABBAGE 
3 lb. red or white cabbage
1 tsp. salt
2 1/2 oz. lard
2 oz. onions
1 tbsp. sugar
Good pinch caraway seed
1 tbsp. vinegar
2 tbsp. red wine

Trim and shred cabbage. Sprinkle with salt. Let stand for at least 1/2 hour. Fry sliced onion rings in lard until golden brown. Add the vinegar, a little water, cabbage, sugar, and caraway seed. Steam under lid until tender. Add wine.
