BREADED LEMON FISH FILLETS 
1/2 c. crushed round crackers
1/4 tsp. salt
1/8 tsp. white pepper
1/4 c. butter, melted
2 tbsp. lemon juice
1 lb. fresh or frozen (defrosted) fish fillets, cut into serving pieces
Paprika

Reserve 2 tablespoons cracker crumbs. Mix remaining crumbs with salt and pepper. Mix butter and lemon juice. Dip fish into butter mixture, then into cracker crumbs. Arrange fish with thickest parts to outside edge on microwave rack in baking dish. Sprinkle with paprika.

Microwave uncovered on high (100%) 2 minutes; rotate baking dish 1/2 turn. Microwave until fish flakes easily with fork, 2 to 4 minutes longer. Sprinkle with reserved cracker crumbs. Garnish with lemon slices, if desired. 5 or 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
