RAISIN SUNSHINE PANCAKES 
1/2 c. boiling water
3/4 c. (4 oz.) chopped, pitted dates
1/4 c. butter
3/4 tbsp. grated orange rind
1/2 c. orange juice
2 eggs, slightly beaten
1/2 c. buttermilk
1 c. unsifted flour
1 c. rolled oats
1/3 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 c. raisins

Pour boiling water over dates, raisins and butter. Stir until butter is melted, set aside. When mixture has cooled to room temperature, stir in orange rind, orange juice, eggs and buttermilk.

Sift dry ingredients into a bowl. Stir liquid ingredients into dry ingredients until just mixed. Cook on a hot griddle.
