MAYONNAISE SPICE CAKE | |
1 cup sugar 2 cups flour 2 tsp. baking soda 1 cup raisins 1 cup liquid (from soaking raisins) 1 tsp. cinnamon 1/2 tsp. ginger 1/2 tsp. allspice or 1/4 tsp. cloves 1 cup mayonnaise or Miracle Whip Preheat oven to 350°F. Grease and flour a rectangular loaf pan. Boil raisins for 5 minutes in 1 3/4 cup of water and 1/4 cup rum (or may use all water). Remove from heat and soak for 15 minutes before baking. Combine all dry ingredients. Add raisins and 1 cup of the soaking liquid (if some of the liquid has evaporated, add water to measure 1 cup). Bake in preheated oven for 35 minutes or until a toothpick inserted in center comes out clean. May drizzle Confectioners Icing over top, if desired. Submitted by: Belle |
