CHOCOLATE "MAYONNAISE" CAKE WITH
APPLE SNOW
 
CAKE INGREDIENTS:

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
4 tablespoons cocoa (I use Hershey's unsweetened)
1 teaspoon vanilla extract
1 cup cold coffee (brewed or instant)
1/2 cup mayonnaise (I use Hellman's)

APPLE SNOW INGREDIENTS:

1 egg white
1 cup sugar
1 apple, peeled, cored, finely grated

CAKE PREPARATION:

In a large bowl sift together the first six ingredients (through cocoa); add remaining ingredients, mixing (not beating) until all the ingredients are moistened (batter may be lumpy... stir to dissolve any larger lumps). BAKE in a greased and floured (or sugared) pan (I have always baked this cake in a tube pan, but a 9x13x2 pan may be used, or even a Bundt pan.

APPLE SNOW:

Beat egg white and sugar until stiff; fold in grated apple, mixing well.

NOTE: THIS IS A VERY OLD RECIPE, POSSIBLY FROM THE 1930s or 1940s; I am 72 years old, have had this recipe "forever" and found it to be THE favorite dessert recipe of my husband & 2 sons!
