BOSTON BAKED BEANS | |
1 lb. (2 c.) dry navy beans 1 1/2 qt. cold water 1 tsp. salt 1/3 c. brown sugar 1 tsp. dry mustard 1/4 c. molasses 1/4 lb. salt pork (or bacon) 1 qt. tomato juice 1 med. onion, sliced Add 1 teaspoon salt to beans and water; bring to boil. Cover and simmer 1 hour. Drain. Combine brown sugar, dry mustard, molasses, tomato juice and onion; stir. Pour in 2 quart casserole. Top beans with pork, sliced and cut in small pieces. Bake at 300 degrees for 3-5 hours or 350 degrees for 1 1/2 hours. Add more liquid if needed. Makes 8 servings. |
