BOSTON BAKE BEANS | |
2 lb. pea beans 1/4 lb. salt pork 2 tsp. salt 1 c. molasses 1 tsp. dry mustard 2 tbsp. brown sugar Quickly bring pea beans to boiling point. Then let soak 1 hour. Then cook until skins burst. Drain but keep water. Cut salt pork into 2 pieces. Put 1 piece on bottom of pot and add beans. Mix salt, molasses, dry mustard and brown sugar; pour over beans. Add enough water to cover. Place salt pork on top of beans, rind side up. Bake 5-7 hours at 250 degrees. Uncover last 1/2 hour. |
