MOM'S BOSTON BAKED BEANS | |
1 lb. navy pea beans 1/2 lb. salt pork 1/2 lb. bacon 1 onion 1/4 c. white sugar 1/4 c. brown sugar 2 tbsp. molasses 2 tsp. prepared mustard Salt & pepper Soak beans overnight. Next morning boil beans with about 1/8 teaspoon baking soda. Boil about 20-30 minutes or until skins separate; drain. Put salt pork and onion in bottom of bean pot. Add beans. Mix sugars, molasses and mustard with a small amount of boiling water. Pour over beans. Add salt and pepper; cover beans with boiling water. Top with bacon. Bake at 250 degrees for 6-8 hours until beans are tender adding water as needed to just cover beans. |
