BOSTON BAKED BEANS | |
1 (16 oz.) pkg. Navy pea beans (sm. ones) 1/4 lb. salt pork 1 1/2 tsp. salt 1/4 c. brown sugar 1/2 tsp. dry mustard 1 sm. to med. onion, cut up into med. chunks 3/4 c. molasses Wash beans and soak overnight or all day depending on when you are going to cook them. Put beans into pot with a goodly amount of water. Boil at medium heat, don't boil over. Cook beans until you can put your fingernail into a bean, not too soft but soft enough. Drain beans, save the water. Put beans, onions and salt pork into bean pot. Mix sugar, salt and mustard together in pot and add bean water to almost top. Add molasses. Bake at 250 degrees for 8 hours. |
