BOSTON BAKED BEANS | |
1 qt. pea beans 1/2 lb. fat salt pork 2 tsp. salt 1 1/2 tbsp. brown sugar 1/4 c. molasses 1/2 tsp. dry mustard 1 c. boiling water Wash beans and soak overnight in cold water. Drain, cover with water and simmer until skins break. Turn into bean pot or use crock pot. Score pork and press into beans. Mix salt, sugar, molasses, mustard and boiling water together. Pour over beans. Cover and slow bake at 300 degrees about 8 hours. Add water as needed. Uncover to brown during last 1/2 hour. 8 servings. |
