BOSTON BAKED BEANS 
1 qt. pea beans (navy)
3/4 lb. fat bacon or salt pork
1 tsp. salt
1/2 tsp. salt
1/2 tsp. mustard
1 c. boiling water
1/3 c. molasses

Soak beans overnight in cold water. Drain next morning and cover with 2 quarts of fresh water. Simmer 1 or 1 1/2 hours or until tender. Drain off water except 1 cup. If salt pork is used wash off most of salt and cut in strips. Place beans in large baking dish or bean pot. Mix seasonings. Place strips of salt pork over beans in pot. Add also cup of water that was saved from the simmered beans. Add more if required. Cover pot and bake 6-8 hours at 250 degrees. Serves 12.
