BOSTON BAKED BEANS 
2 lbs. pea or navy beans
1 lb. salt pork or bacon with rind
3 med. onions, sliced
1/2 c. brown sugar
2/3 c. molasses
1/4 c. Dijon mustard
2 tbsp. ground ginger
1/2 c. ketchup
Salt & freshly ground pepper to taste

Place the beans in a pot, cover with water and bring to a boil. Remove from the heat and allow the beans to soak for 1 hour. Drain the beans and place them in a heavy casserole and cover them with water. Cover the pot, bring to a boil and cook for 10 minutes until the beans burst. Cut the salt pork or bacon into 1/2" cubes. Mix all the remaining ingredients into the beans. Cover and bake in a preheated 300 degree oven for 6 hours. Check the beans every hour or two and add more water if needed.
