MEXICAN HOT DOGS 
2 tbsp. butter
1 med. onion, peeled & minced
1 (8 oz.) can refried beans
8 frankfurters
8 tortillas
1 (4 oz.) can enchilada sauce
1 lg. avocado, peeled & chopped
1 sm. head lettuce, chopped, shredded
1 lg. tomato, peeled, seeded & cut in strips
Shredded cheddar cheese

Melt butter in a heavy skillet, saute onion in butter until soft. Add beans, cook over medium heat until very hot. Split and broil frankfurters. Heat tortillas in a medium oven. Heat enchilada sauce in a small saucepan. Spread tortillas with bean mixture. Add frankfurters. Place on serving plate. Cover with enchilada sauce. Top with avocado mixture, lettuce and tomato. Sprinkle heavily with cheese. Serve very hot.
