BAKED CHICKEN THAT MAKES ITS OWN
GRAVY
 
1 chicken, cut up
1/4 c. flour
1/4 c. melted butter
1 med. can sliced mushrooms, drained
1 med. can whole onions, drained
2/3 c. evaporated milk
1 can cream of mushroom soup
1 c. grated yellow cheese
1/2 tsp. salt
1/2 tsp. pepper

Coat chicken with flour. Arrange in single layer with skins down in melted butter in 13 x 9 x 2 inch baking dish. Bake, uncovered at 425 degrees for 30 minutes. Turn chicken and bake 15 to 20 minutes longer or until tender.

Remove baking dish from oven, reduce heat to 325 degrees. Pour off excess fat. Combine onions, mushrooms, soup, evaporated milk, cheese and seasonings. Pour over chicken. Cover with foil. Return to oven and bake 15 to 20 minutes longer. Serves 6.
