STUFFED MUSHROOMS 
1 lb. fresh mushrooms
1 onion, finely chopped (good sized)
2 tbsp. butter
1 pkg. frozen spinach (10 oz.)
1 egg, beaten
1/2 - 1 c. bread crumbs
6-8 oz. Swiss cheese, grated

Remove stems, chop finely. Saute with onion in butter.

Cook spinach according to package directions, drain. Add sauteed onion, stems, cheese, egg, bread crumbs, little salt and stir well. Stuff mushrooms with mixture and broil until bubbly.

You can make these the day before you intend to serve them. Be sure to cover the pan completely and well with Handiwrap and keep in refrigerator until ready to use. You can take out of refrigerator half an hour ahead before broiling if you like. Eat and enjoy!!!
