GROUND BEEF STROGANOFF 
2 tbsp. vegetable oil
1/3 c. chopped onion
1/8 tsp. garlic powder
1 lb. lean ground beef
2 tbsp. all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1 (10 1/2 oz.) can cream of chicken soup
1 (4 oz.) can mushroom pieces and stems
1 c. plain yogurt or sour cream
1/4 c. chopped fresh parsley

Heat the oil in a skillet and add onion. Saute for 4 minutes until the onion is soft. Add garlic powder and ground beef. Stir and cook for 10 minutes. Add flour, salt and paprika, mixing it well. Add soup and simmer for 10 minutes. Stir in yogurt or sour cream and heat until very hot. Pour on rice. Sprinkle with parsley and serve. Serve over rice.

Substituted fresh mushrooms but otherwise followed recipe. I did drain the oil after cooking the ground beef. This was a yummy skillet dinner I served over simple egg noodles. Even my young boys enjoyed it!
