BUTTERSCOTCH COCONUT CRUNCHIES 
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shortening
2 eggs
1 1/4 c. packed brown sugar
2 tsp. vanilla
2 1/2 c. corn flakes
3/4 c. coconut

Mix flour, baking powder, salt and cream the butter and sugar together. Blend well, then add one egg at a time, beat. Add vanilla. Add flour little at a time. Stir in cereal and coconut. Drop by teaspoon to an ungreased cookie sheet. Bake 10-12 minutes at 375 degrees.
