LEMON SQUARES 
1 c. butter (I use 1/2 butter, 1/2 butter), room temp.
1/2 c. plus 1 tbsp. 10x sugar
2 1/3 c. unsifted flour (all-purpose)
4 eggs
1 3/4 c. sugar
1/3 c. lemon juice
1/2 tsp. double-acting baking powder

Preheat oven to 350 degrees. Cream butter and 10x sugar plus flour. Pat evenly into 13 x 9 inch baking pan. Bake 20 minutes. A couple minutes before crust is done in blend put:

4 eggs
1 3/4 c. sugar
1/3 c. lemon juice
1/2 tsp. baking powder

Blend a minute or so, stopping once to scrape down sides. Pour over crust and bake an additional 25 minutes until lightly browned. Cool. Cut into squares. Sprinkle with 10x sugar.
