SAUSAGE YORKSHIRE PUDDING
CASSEROLE
 
1 lb. ground, mild sausage
1 3/4 c. flour
1 tsp. salt
4 eggs, beaten
2 c. milk

Preheat oven to 450 degrees. Brown the sausage. Mix together the beaten eggs and milk. Mix together the flour and salt and add to the milk mixture. Beat until bubbly and thick (like cream). Pour sausage and about 2 tablespoons of the sausage grease into the bottom of a 9 x 13 x 2 inch casserole or baking pan. Pour egg and milk mixture over the top. Bake at 450 degrees for 15 minutes. Then reduce oven heat to 350 degrees and bake for about 20 minutes more. Serve immediately. Best if served with a brown or cream gravy. Can be used as a brunch or supper dish. Serves 4 to 6.
