ROAST BEEF AND YORKSHIRE PUDDING
FOR FOUR
 
Roast beef for 4
1/4 lb. flour
1/4 tsp. salt
1 egg
1/2 pt. milk

Roast beef as desired. For pudding, sift flour and salt into dish, break egg and drop into center. Beat thoroughly and stir in milk. Beat until surface is covered with bubbles. Let stand at least 1 hour. Heat a 10 x 7 1/2 inch tin and pour in 1/4 inch of beef drippings. Pour in batter more than 1/2 inch deep. Bake 20 minutes at 400 degrees and 10 minutes at 350 degrees until done. Cut into 4 squares and serve at once. Double recipe for 8, etc.
