ROLLED CHICKEN BREAST FLORENTINE 
4 chicken breasts, boned & skinned
4 thin slices cooked ham
4 thin slices Swiss cheese
1 (10 oz.) pkg. frozen chopped spinach, thawed & well drained
1 can cream of chicken soup
1/3 c. water
1/4 c. sliced green spring onions
1/8 tsp. thyme

Pound chicken until 1/4 inch thick (flat). Place 1 slice ham, 1 slice cheese and 1/4 of spinach on flat chicken breast. Roll chicken breast from pointed end and secure with a wood toothpick.

In microwave safe dish place seam side down, cover with plastic wrap and microwave on high for 5 minutes. Put soup, water, onions and thyme in saucepan and heat until smooth. Pour sauce evenly over chicken breasts and microwave 10 minutes more on high turning dish once every 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
