CHICKEN FLORENTINE 
10 oz. fresh or frozen spinach
1/4 c. plus 2 tbsp. butter
1/4 c. flour
2 c. milk
3/4 c. grated Parmesan cheese
Chicken

Preheat oven to 400 degrees. Thaw spinach and squeeze out excess water. In saucepan melt 1/4 cup butter. When hot, add flour and stir. Add milk all at once and stir with wire whisk until boiling. Stir in 1/2 cup cheese until melted. Remove from heat; add spinach.

In a skillet melt 2 tablespoons butter. Add chicken and cook 2 minutes each side. Place in cake pan. Spoon sauce over each breast and sprinkle with cheese. Bake for 30-40 minutes.
