LENTIL SOUP 
1 lb. lentils
1 ham bone or 1 c. diced ham
1 lg. onion
1 c. diced celery
2 1/2 to 3 qt. water
1 1/2 c. diced potatoes
1 c. diced carrots
Salt, to taste

Wash lentils and soak overnight in water. Drain. Place lentils, ham bone or ham, onions, and celery in a pot. Bring to a boil. Reduce heat and simmer 1 hour. Add potatoes and carrots and continue to cook for 30-45 minutes or until done.

Vinegar and sugar may be added at the table for individuals tastes.

Sliced Kielbasa or frankfurters may be added for variations.
