HASH BROWN OMELET 
6-8 slices bacon
2-3 c. hash browns
6-8 eggs, beaten
1/4 c. milk
8 oz. cheddar cheese, shredded
Salt and pepper

Cook bacon; drain and set aside. Cook hash browns in bacon grease until almost done. Mix eggs, milk, salt, and pepper to taste. Pour egg mixture over hash browns. Crumble bacon over top of mixture. Sprinkle cheese over bacon. Cover skillet and cook over low heat until eggs are set, about 20 minutes. Serves 4.
