RIBS DIABLO 
7 lb. pork spare ribs (or 10 lb. beef back ribs)
parsley sprigs, for decoration

BARBECUE SAUCE:

1 medium onion, minced
2 cloves garlic, minced
1 tbsp. butter
1 1/2 cups ketchup (Hunts)
1/3 cup bottled steak sauce (A1)
1 cup brown sugar
8 oz. beer
1 tbsp. honey
1 tbsp. Worcestershire sauce
1 tbsp. seasoned salt
1 tbsp. hot pepper sauce

Boil ribs in water to cover for 1 hour.

Meanwhile, sauté onion and garlic lightly in butter. Add ketchup, steak sauce, brown sugar, beer, honey, Worcestershire sauce, seasoned salt and hot pepper sauce. Bring to boil, reduce heat an simmer for 30 minutes.

Drain ribs and bake at 350°F for 30 to 40 minutes (or on outdoor grill over indirect coals). Bake until brown.

During the last 15 minutes, baste with barbecue sauce and cover with sprigs of parsley.

Makes 6 to 8 servings.
