SWISS SPINACH QUICHE 
1 (9 inch) pie crust
8 oz. Swiss cheese, cut into strips
2 tbsp. flour
1 c. milk
4 eggs, well beaten
1/2 tsp. salt
1 sm. onion, grated
Dash pepper, dash nutmeg
10 oz. spinach (fresh or frozen) cooked and drained

Prepare pie crust.

In a small bowl toss cheese and flour.

In another bowl combine milk, eggs, seasonings. Add cheese mixture and spinach and mix well. Pour into pie crust. Bake in preheated 350 oven for about 1 hour. Serve warm.
