SWISS SPINACH QUICHE 
Serves 8

1 med. onion, chopped
2 tbsp. butter
8 oz. Swiss cheese, shredded
2 tbsp. flour
1 c. heavy cream
3 eggs, beaten
1/2 tsp. salt, dash pepper
1 pkg. (10 oz.) frozen spinach, cooked and drained
1 frozen pie shell

Saute' onion in butter until translucent. In small bowl, toss the cheese with the flour. In second bowl, combine cream, eggs, and seasoning. Add cheese mixture, onions, and spinach. Mix well. Pour into crust and bake 350 degree oven for 1 hour.
