SWISS STEAK 
1 1/2 lbs. boneless round steak or 2 lbs. beef chuck, 1/2" thick
1/4 c. flour
2 tbsp. oil
1/8 tsp. salt
1/8 tsp. pepper
16 oz. tomatoes
1 med. onion, sliced
1 celery stalk, diced

Mix flour, salt and pepper. Coat meat with mixture. Heat oil in large frying pan, brown meat on both sides. Drain off oil. Add remaining ingredients. Cover tightly and simmer until meat is tender, about 1 1/2 to 1 3/4 hours.
