LUSCIOUS LEMON DESSERT 
CRUST:

1/4 c. (1/2 stick) butter
1/2 c. flour
1/4 c. chopped pecans

Mix ingredients for crust together and press into 8" square baking pan; bake for 15 minutes at 300 degrees.

FILLING:

4 oz. cream cheese, softened
1/2 c. unsifted powdered sugar
1 tsp. lemon extract
1/4 c. whipped cream or substitute

For filling, whip cream cheese in mixer until fluffy. Add powdered sugar and lemon extract. Fold in whipped cream. Spread over cooled crust.

PUDDING:

1 sm. pkg. lemon instant pudding
1 1/2 c. milk
2 tsp. lemon juice

For pudding, prepare pudding using 1 1/2 cups milk (instead of 2 cups). Add lemon juice as you prepare pudding. Spread over cream cheese filling. For topping, top with whipped cream or substitute. Chill.

Variations: Substitute chocolate, butterscotch or other flavored instant pudding.
