CREME DI MACHERAPONE | |
2 (8 oz.) pkgs. cream cheese 4 eggs 1 tsp. vanilla 1/2 c. confectioners' sugar 1 tbsp. lemon juice 1 1/2 c. strawberries 1 1/2 c. blueberries 1 1/2 c. pineapple chunks Place cream cheese in bowl and break 4 eggs into the cheese. Add vanilla and the confectioners' sugar and lemon juice. Beat with mixer on low speed until it begins to soften and then increase speed to medium until the mixture is light and fluffy. Place in a serving bowl and refrigerate until ready to serve. Arrange strawberries, blueberries and pineapple on a large serving tray or platter and place the creme either in the center or next to the fruit. Guests help themselves to fruit and then to the creme and dip the fruit into the creme. (You can use peaches, apricots and blueberries as another combination, but then use orange juice in place of lemon juice.) |
