EGGPLANT DELIGHT 
1 med. eggplant
Lemon juice
1 egg, slightly beaten
1 tbsp. oil
Flour
2 cans pizza sauce
1/2 lb. Mozzarella cheese
1/4 c. milk
1/2 c. Parmesan cheese

Peel eggplant, slice 1/4 inch thick. Brush each side with lemon juice.

Combine egg, milk and oil. Dust each slice with flour and dip in egg mixture. Fry until golden brown.

Spread pizza sauce on bottom of baking dish, then eggplant, Mozzarella cheese. Repeat layers and top with Parmesan cheese. Bake 350 degrees for 25-30 minutes.
