SAUSAGE AND RICE 
1 1/2 lb. hot sausage, broken up
1 green pepper, chopped
1 small onion, chopped
3 or 4 celery stalks, diced
1 jar pimentos, sliced
1 (4 oz.) can mushrooms, drained
2 c. chicken broth
1 c. uncooked rice

Brown sausage. Drain. Sauté pepper, onion and celery until soft. Add remaining ingredients and simmer until rice is tender.

Serves 6.
