SCALLOPED ZUCCHINI | |
6 med. zucchini 1/4 lb. sausage 1/4 c. chopped onions 1/2 c. Parmesan cheese 1/2 c. finely crushed crackers (14) 2 eggs, beaten 1 tsp. salt Cut off ends of squash and don't peel. Cook in salted boiling water about 15 minutes or until tender. Drain and save 1/2 cup of liquid. Cook sausage and onions, drain fat. Mix all ingredients and pour in pan. Sprinkle with more cheese. Bake at 350 degrees for 40 to 45 minutes. |
