SCALLOPED ZUCCHINI 
6 med. zucchini
1/2 lb. pork sausage
1/4 c. chopped onion
1/2 c. finely crushed crackers (14)
1/2 c. grated Parmesan cheese
2 slightly beaten eggs
1 tsp. salt
1/8 tsp. thyme, crushed
Dash of pepper
Crushed garlic

Wash zucchini, trim end but do not pare. Cook whole zucchini covered in boiling salt water until tender. Do not overcook. Drain thoroughly, reserve 1/2 cup liquid. Chop zucchini coarsely (about 5 cups). Cook sausage and onion together over medium heat until browned. Drain off grease. Add zucchini and liquid and remaining ingredients. Mix well. Turn into ungreased 1 1/2 quart casserole. Sprinkle top with cheese. Bake at 350 degrees for 40 to 45 minutes. Serves 8.
