TOMATO ZUCCHINI SCALLOP 
3 sm. zucchini, sliced about 1/4 inch thick
1 med. onion, thinly sliced
4 tomatoes (another for garnish)
1 c. croutons
1 tsp. salt & pepper to taste
1/2 to 1 c. Cheddar cheese, shredded

In 1 1/2 quart casserole layer half of the cheese and all other ingredients, season and repeat layer. Cover. Bake and then add rest of the cheese and bake with cheese on.
