ZUCCHINI SCALLOP 
1 lb. zucchini, thinly sliced
3 tbsp. butter
1 lb. fresh tomatoes, quartered
Salt & pepper to taste
Sugar to taste
3 tbsp. Parmesan cheese (opt.)

Saute zucchini in butter, add tomatoes, salt, pepper and sugar. Simmer for 15 minutes or until zucchini is crisply tender. Sprinkle with cheese.
