ZUCCHINI ROUNDS 
1/3 c. Bisquick
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
1/2 tsp. salt
2 lightly beaten eggs
2 c. shredded zucchini
2 tbsp. butter

In mixing bowl, stir together first 3 ingredients. Add eggs and stir until mixture is moistened. Fold in zucchini.

In skillet, melt butter over medium heat. Use 2 Tbsp. of mixture for each round; cook 2 to 3 minutes on each side.

Makes 12 rounds.
