GRILLED BUTTERFLIED LEG OF LAMB 
Have butcher bone and butterfly a leg of lamb.

MARINADE:

1/2 c. olive oil
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder or 2 cloves garlic minced or pressed
Fresh mint (may use dried)

Marinate lamb, refrigerated and covered, for at least 3 hours. Turn frequently. Cook on grill until medium rare.
