HOT POTATO SALAD 
1 egg
1/2 c. sugar
1/2 c. cream
Butter
Onion, chopped
1 tbsp. flour
1/2 c. vinegar
Salt and pepper to taste
Mashed potatoes (amount will vary)

Beat together 1 egg and 1 tablespoon flour. Combine sugar, vinegar, cream, and egg mixture and cook into a sauce. Keep sauce hot in the top of a hot double boiler. Peel, cook and mash potatoes (size and amount of potatoes may vary). Add salt, pepper and butter. Add chopped onion and tomatoes to potato mixture. Stir in hot sauce. Serve hot.

Sauce will save for later use, if necessary. The amount of mashed potatoes used depends on the number to serve. Just use the sauce instead of milk to cream the potatoes.
