SALMON RICE PATTIES | |
1 (7 3/4 oz.) can salmon 2 c. cooked brown rice 1 egg 1 tbsp. lemon juice 1 tbsp. finely chopped scallions 2 tbsp. chopped parsley 2 tbsp. whole grain flour Dash of pepper Wheat germ Remove skin and bones from salmon; flake salmon. Combine with rice. Beat egg slightly and add lemon juice, scallions, parsley, flour, and pepper; mix well. Combine with salmon-rice mixture. Form into 8 patties. Coat with wheat germ. Place in greased baking pan. Bake at 350 degrees for 30 minutes or until golden brown. Serves 5. |
