SALMON RICE PATTIES 
1 (7 3/4 oz.) can salmon
2 c. cooked brown rice
1 egg
1 tbsp. lemon juice
1 tbsp. finely chopped scallions
2 tbsp. chopped parsley
2 tbsp. whole grain flour
Dash of pepper
Wheat germ

Remove skin and bones from salmon; flake salmon. Combine with rice. Beat egg slightly and add lemon juice, scallions, parsley, flour, and pepper; mix well. Combine with salmon-rice mixture.

Form into 8 patties. Coat with wheat germ. Place in greased baking pan. Bake at 350 degrees for 30 minutes or until golden brown. Serves 5.

Since I try and stay gluten free, I made this recipe with quinoa instead of brown rice, and to eliminate the gluten, instead of 2 tbsp. Whole grain flour, I used Rice flour and left off the wheat germ step. This was very good and if I wasn't sensitive to gluten, would have made it exactly as posted. Very good and will make again.

Since when is rice not gluten free? Gluten is a wheat protein. Rice is gluten free, you could have used the rice! Not to mention I'd assume the quinoa doesn't have the starchy properties that would hold the patties together. Glad it worked out though.
