EASY DRIED APPLES FOR FRIED PIES 
3 gal. apples, cored and cut up with peeling on
8 c. sugar
1 c. white vinegar

In large pan, put apples and sugar. Let set overnight. Next morning, add vinegar and cook over LOW heat until very thick. Stir often as they stick easily. You can freeze or can them. They taste like real dried apples. Really great for fried pies.
