CHEESY HAM AND RICE 
1/2 c. green peppers
1/2 c. celery
1/2 c. onion
2 tbsp. butter
2 tbsp. flour
2 c. evaporated milk
1 1/2 c. sharp cheddar cheese, grated
2 c. ham, cooked, chopped
1 tsp. dry mustard
1 tsp. garlic salt
1/4 tsp. red pepper
1 tsp. Worcestershire sauce
3 c. cooked rice

Dice first 3 ingredients and saute in butter. Blend in flour. Add milk; cook until sauce is thick and smooth. Add cheese and heat until melted. Add ham, mustard, salt, Worcestershire and red pepper. Spoon over cooked rice. Serves 6.
