HELGA'S SPECIAL COOKIES | |
1 1/2 c. light brown sugar 1 c. chunky peanut butter 3/4 c. butter 1 lg. egg 1/4 c. water 2 tsp. vanilla 3 c. quick cooking oats 1 1/3 c. flour 1/2 tsp. baking soda 1 c. semi sweet chocolate bits 1 tbsp. shortening Combine sugar, peanut butter, butter until light and fluffy. Blend in egg, water and vanilla. Combine oatmeal with flour and baking soda. Add to sugar mixture and mix well. Shape dough into 1" balls. Place on ungreased cookie sheet. Using the bottom of a glass, flatten balls to about 1/4" thick. If dough sticks to glass, dip glass in sugar. Bake in preheated 350 degree oven for 8 to 10 minutes, until edges are golden brown. Remove from cookie sheet to wire rack to cool. Melt chocolate with shortening in a heavy saucepan over low heat. Stir until smooth and creamy. Drizzle cooled cookies with chocolate. Yield: about 5 dozen cookies. |
