5 c. sifted flour 1 c. sugar 1/2 c. butter 2 1/2 c. raisins, white or black 2 1/2 c. low fat buttermilk 1 tsp. baking soda 1 tbsp. baking powder 1 1/2 tbsp. caraway seeds 2 sm. or 1 lg. egg 1 1/2 tsp. salt Mix all ingredients together and bake in greased pie plate for 1 hour or longer if necessary at 350 degrees. Insert toothpick and when it comes out clean, it's done. DIETITIAN'S NOTE: Perfect for St. Patricks Day! It's difficult, especially for women, to meet recommended dietary allowances for iron. Raisins are high in iron and will help you to meet your daily requirement. Skip the butter and choose a butter that lists a liquid oil as the first ingredient. Reduce salt to 3/4 teaspoon. |
