PINEAPPLE AND CHERRY SQUARES | |
1 c. sugar 2 1/2 tbsp. cornstarch Pinch of salt 1 (#2) can crushed pineapple 1 can cherry pie filling Cook over low heat until thick. Cool. THE PASTRY: 4 1/2 c. sifted flour 2 tsp. baking powder 1/2 c. sugar 1 c. sour cream 1/2 tsp. salt 1/2 lb. butter 1/2 tsp. baking soda 3 egg yolks Sift flour, measure, sift into mixing bowl with baking powder and salt; blend in butter using a pastry blender. Stir in sugar. Blend soda into sour cream. Beat egg yolks. Add sour cream. Stir into dry ingredients using fork. Blend but do not over stir. Turn onto lightly floured board. Blend until smooth. Use 2/3 of dough. Roll out to fit baking dish 15 1/2 x 10 inches or larger depending on thickness of dough desired. Spread half with pineapple filling and half with cherry filling. Roll out rest of dough, Cut into strips. Make lattice top. Bake at 350 degrees for 30 minutes. DO NOT OVER BAKE. Great for parties. |
