SCONES 
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 1/2 tsp. baking powder

OR 2 1/2 c. self-rising flour (works well):

4 oz. butter
2 tbsp. sugar
1 c. milk

Preheat oven to 400 degrees. Mix flour, baking soda and powder, rub butter into flour (or mix as with pie dough), add sugar. Pour in enough milk so that dough is slightly sticky but dry enough to knead. Remove from bowl onto well floured surface. Knead briefly, flatten to 1 or so inches, and cut dough into circles using a glass or round cookie cutter for example. Place on floured cookie tray, glaze with milk. Cook until golden, approximately 15-20 minutes.

For extra flavor top with grated cheese or add 1/2 cup raisins to the mix when sugar is added.
