FRESH APPLE SPICE CAKE 
1 1/2 c. oil
2 c. sugar
2 eggs
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
2 tsp. apple pie spice
1 tbsp. vanilla
1 c. chopped pecans
3 c. chopped apples

Combine oil, sugar, and eggs; beat until creamy. Combine flour, salt, soda, baking powder, and apple pie spice. Add a little vanilla at a time to above mixture. Fold in pecans and apples. Bake in long pan at 350 degrees for 55-60 minutes. Frosting for this cake follows:

Combine: 1/2 tsp. salt 2 tsp. evaporated milk 1 c. packed brown sugar

Heat just to melt butter and dissolved sugar. Add 1 box powdered sugar, add enough evaporated milk to make of spreading consistency.
